Super Bowl Yummies!

Super Bowl Sunday folks…..Tampa Bay Buccaneers against the Kansas City Chiefs. And what is a Super Bowl party (even if it is just us), without some delicious sustenance? Jeff woke up at 4:00 a.m. to get his pork butt in the oven trying to perfect his almighty pulled pork rendition. Men really do take their meat seriously and this man will not stop until he’s got it down. The choice of meat is of course is very important as last time, he purchased a pork shoulder. This time, as I said it was a pork butt which I guess has more fat, and thus, more yummy goodness flavor.
While that cooked low and slow
for 12 hours taking up my valuable oven space 🤨, I prepared my bacon and cheese laden potato skins. Though they don’t take as long as pulled pork to prepare, they do take some time. Next, a soup recipe I’ve made for years…...ravioli soup;
a perfect concoction on a cold, overcast day like today. I make it with either chicken broth or vegetable broth and at times adding butternut squash raviolis (perfect if you like a little sweetness to your soups), or anything that is meatless. But today’s selection was mushroom/arugula raviolis. We’re huge arugula fans!
Potato skins….a disaster and here’s why. Don’t ever bake a potato on low and slow for 3 hours. I wasn’t in a rush for these and thought I’d just match whatever Jeff had in the oven. Once quartered, and fried a bit, they go back in the oven to melt the cheese and crisp up the bacon. I’ve made these before with success, but this time a huge disappointment after all the work. They turned out rubbery and tough. Meanwhile, we enjoyed the soup which did turn out fabulous, and Jeff’s pulled-pork…...a 9 out of 10. And his team won. At least one of us was happy with how the day ended. Congratulations Buccaneers and Tom Brady’s 7th SuperBowl win!
