Rainy Days and Shopping

Day 301


We thought we’d do more touring with the kids when the weather is more cooperative. So with today’s rainy, windy weather, it was the best day for us girls, along with baby Carson to get some shopping done. Of course, he was the center of attention, so the shopping took longer than expected. And what a good, easy going baby. All things big, i.e. Home Depot, TJ Maxx, Target, etc. are all a 10 minute drive from Mahomet in a town called Champaign. And we got it all done!


Meanwhile, Devin tended to domestic duties while Jeff stayed at the trailer to work on our shower door, but ran into an obstacle when he discovered it would take 2 people to put in the new one. It’s nice to see that 30 item honey-do list shrinking down to less than 10. 🙌


Tonight was my night being chef. One thing we couldn’t live without is our large recipe binder, full of our family favorites. There have been a few dishes we’ve made in the past, that were not binder worthy. But one dish did make the cut…..General Tsao Chicken and vegetarian fried rice. It’s been a while since I’d made it, and it just sounded yummy and something I knew everyone would like. And I was right. Everyone loved it. It’s sort of a version of orange chicken, but with a richer, more complex sauce. I was unable to find my one key ingredient…..dried red chilis, so decided to take a risk and substitute Chipotle in Adobo Sauce. It ended up being even better than I imagined. Funny how those things happen. And what a nice change being in Hannah and Devin’s kitchen from the 50 square feet we have in “Billie Jean”. Always the baker, Hannah made a batch of chocolate chip cookies for dessert. Deelicious!
